eventually I decided to start taking a hunk out of it with some good ol' zucchini bread. I decided to try a new-to-me recipe (instead of my mom's tried-and-true chocolate-chip including version), and I chose the one posted by the lovely Amanda of Little Lady Little City. here's her recipe, and here's the one she based it on.
and now here's mine, with my own twist:

- 3 cups of whole-wheat flour
- 1 tbsp salt
- 1 tbsp baking powder
- 3 tbsp cinnamon (I was near the end of a tin, so I just poured it all in)
- 3 eggs
- 3/4 cup vegetable oil
- 1 1/2 cups white sugar
- 3 tbsp vanilla extract (I just poured however much I wanted in)
- 3 cups chopped zucchini (chopped instead of grated gives it a nice texture, but if you prefer it to be more invisible, just grate. 1/4 of my giant zucchini = 3c chopped)
- 1 tbsp honey (local wildflower)
Combine flour, salt, baking powder, and cinnamon in a medium-sized bowl. In a larger bowl, mix eggs, sugar, vegetable oil, vanilla extract, and honey together, until well-blended. Add zucchini to the wet mixture and then add in dry ingredients (slowly, in batches). Once mixed well, pour into well-greased pans (I used glass 13x9).
Bake at 325°F for 40-50 minutes. Perfect warm with a cup of tea!
Baker's notes:
- It took me just under an hour of prep because I hadn't cut up the huge zucchini yet, I'm generally just a slow baker, and I was taking plenty of pictures.
- In the future I'd like to try substituting apple sauce for vegetable oil... the cinnamon-y smell reminded me so of apples, and that would add another layer of flavor.
- It was more on the dry side because I used whole wheat flour, but the top was still sticky-moist.
